Taste the MoFo Rainbow

Ahhh, Skittles. Back in the early days of my veganism, I used to get imported vegan Skittles from Israel. Now, they make them without gelatin (OR gluten) here in the states! I picked these up along with some Special Import Pepsi (also known as the one with real sugar that is made in Mexico), a Chick-o-Stick, and some potato chips for office snacking. I loves my junk! Below the jump, what I did to make amends for my crazy snacking.

That right there is Mocked Clam Chowder from Sarah Kramer’s La Dolce Vegan. It’s an easy and fast recipe that my family always loves. I doubled the recipe because I have teen and tween aged kids whose appetites are threatening to eclipse my own (large) appetite. I also added more potatoes than it called for, because I felt like it. It was a drizzly and cold night, but we felt much more cozy after this chowder and some family time. I recommend you do the same. Especially if you got into the Skittles like I did.
