Luckily, we’re always vegan and we always eat. And, being vegan eaters, we almost always take pictures of our food. We’re special like that. The Vegan Month of Food is made for people like us. Behind the jump, some of the food we’ve been eating at the start of Vegan MoFo!
We attended an event over the weekend that didn’t have a vegan gluten free dessert option, so once we got home, we decided to make our own. My daughter watches me decorate cakes for other people and she often wishes she could help. This time, I gave her free reign and I love what she came up with.
My husband and I ended up on an adventure in Beaverton this weekend and found ourselves starving with no idea where to eat. Luckily, there was a Cafe Yumm! nearby and we had an awesome feast. I wish they’d open one here in Salem. NOM.
This morning when I came to work, I noticed there were some cute little cuppers on my desk. My coworker had some leftovers from a birthday party over the weekend, and was kind enough to gift me a whack of gorgeous squash mini cupcakes topped with delicious (and CUTE!) vegan cream cheese frosting. Again, I say NOM.
Tonight, I’m planning to make tacos. What big plans to do you have for the Vegan Month of Food?
