Since I know I won't remember to post what I ate today tomorrow, I will do it today! Did that make sense?
Today was a lazy Sunday. We were all tired and wanted to lay around. Yeah. and we spent most of the day trying to get caffienated/rested enough to walk the dog.
Breakfast:
Pancakes that I veganized from an Alton Brown recipe.

I subbed flax for the eggs, Earth Balance for the butter, and Soymilk with vinegar for the buttermilk. Man, were they yum. We topped them with homemade raspberry jam, Maranatha creamy peanut butter, Earth Balance, and homemade maple flavored syrup from La Dolce Vegan (Sarah Kramer's new book)
I also had coffee! mmmmm
Lunch:
Leftover Pizza from yesterday's dinner ("The Joint's Cheezeburger Pizza" from the aforementioned La Dolce Vegan)
Okay, this is seriously good pizza. My kids didn't love it, but they've never really had cheeseburgers, so they didn't have a point of reference.
Snack Numero Uno:
Iced Coffee with Soymilk
Slice of Hazelnut Bundt Cake
Small Square of Dagoba Lavendar Chocolate
(fortifying myself for the dog walking...)
Snack Numero Dos:
Cherry China Cola
(we went to the Natural Foods Store on the way back from the dog park to get ingredients to make my husband some raw treats from "Raw in 10 Minutes"*)
Dinner:
Tennessee Corn Pone, topped with ketchup

I doubled the recipe and used 1 can of Westbrae Chili beans and one can of beans with chili sauce)
Sliced Apples, Oranges, and Cucumbers
Dessert?

My tummy is kinda rumbly, and not in a good way. But I loves me some dessert. Hmmm.
*my husband had "Nuggets with BBQ Sauce and Sweet Mustard Dressing" from "Raw in 10 Minutes" for dinner tonight. The nuggets are made mainly from ground flax and are surprisingly good. And he loved the two sauces. We will be uncooking from this book all week long for his dinners.
